Established Thai restaurant seeking to expand into a wedding and banquet venue with adjoining high-end bar & restaurant. Coordinated final stages of multi-million dollar wedding venue and restaurant opening, working closely with leadership team to facilitate daily operations for newest business pulling from established best practices. Monitored and facilitated daily operations of project to completion.

Absorbing responsibilities of COO (out on maternity leave) and coordinating the final stages of opening
Project & Operations Management
Monitored project development, ensuring adherence to budget and timelines, liaising on behalf of owners with outside vendors
Attended sales and negotiation meetings, recording and tracking fulfilment of purchase agreements
Implemented regular meetings with stakeholders to advise on progress, finances, and approaching deadlines
Operational Organization
Established organized systems to facilitate daily operations for newest business pulling from established best practices, and maintaining cohesiveness between entities
Set up new offices with required equipment and online accounts
Created detailed operations document for Chief Operations Officer
Event Planning & Coordinating
Cultivated exclusive and preferred relationships with existing clientele to negotiate and secure over $30k in event contract sales
Facilitated leadership meetings to coordinate special events, ensuring staff, equipment and other necessities in place
Oversaw the training and management of front of house staff
The Build out
Despite initial delays, due to foundational issues, Citronelle, once a vacant parking lot, emerged transforming the landscape of the historical downtown armory with it’s two story tall glass atrium ceiling, 60-ft marble bar top, and elegantly chosen fixtures.
Banquets & Private events
Over 10,000 sq. ft. (including a 2,ooo sq. ft. kitchen) Citronelle has the capacity to seat up to 300 people, or host a standing reception for nearly 600.
